Ingredients
- 1/2 pound Mexican-style chorizo sausage
- 6 large eggs
- 4 large flour or corn tortillas
- 1/2 cup shredded cheese (optional)
- 1/4 cup salsa (optional)
- Optional additions: Diced potatoes, onions, bell peppers, guacamole, hot sauce
Instructions
- Cook the Chorizo: Heat a large skillet over medium-high heat. Add the chorizo and break it up with a spatula. Cook until browned and cooked through (about 5-7 minutes), draining any excess fat.
- Scramble the Eggs: In the same skillet (no need to clean it), scramble the eggs. You can add diced potatoes, onions, and bell peppers to the eggs while scrambling, if desired.
- Warm the Tortillas: Warm the tortillas according to package instructions (microwave, dry skillet, or oven).
- Assemble the Burritos: Place a portion of the chorizo-egg mixture in the center of each tortilla. Add cheese and any other desired toppings.
- Fold and Roll: Fold the sides of the tortilla over the filling, then tightly roll it up from the bottom.
Notes
- For a spicier burrito, use spicier chorizo or add hot sauce.
- To make the burritos ahead of time, assemble them and wrap them tightly in foil or parchment paper. Refrigerate and reheat in the microwave or oven.
- You can customize the fillings with other vegetables like spinach or black beans
