Part 1: Corn Pudding
1 .Preheat oven to 350°F (175°C). Grease a baking dish.
- In a large bowl, whisk together eggs, milk (or cream), and melted butter.
- Stir in corn, sugar (if using), salt, and pepper.
- Pour the mixture into the prepared baking dish.
- Bake for 45-50 minutes, or until the pudding is set and lightly golden on top. A toothpick inserted into the center should come out clean.
Part 2: Oven-Roasted Potatoes
- Preheat oven to 425°F (220°C).
- Wash and cut potatoes into uniform pieces. Peel if desired.
- In a large bowl, toss potatoes with olive oil, salt, pepper, and any desired herbs or seasonings.
- Spread the potatoes in a single layer on a baking sheet.
- Bake for 30-40 minutes, flipping halfway through, until golden brown and crispy.
