The Ultimate Corn Pudding and Oven-Roasted Potatoes: Comfort Food Duo

Ingredients

  • Part 1: Corn Pudding

     

    Fresh corn kernels (from about 4 ears) or 2 (15-ounce) cans of corn, drained

  • 2 cups milk or cream
  • 3 large eggs
  • 1/4 cup sugar (optional)
  • 1/4 cup butter, melted
  • Salt and pepper to taste
  • Optional additions: Shredded cheese, nutmeg, smoked paprika, fresh herbs (thyme, chives)

 

  • Part 2: Oven-Roasted Potatoes

     

  • 2 pounds russet or Yukon Gold potatoes, washed and cut into 1-inch pieces
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Optional additions: Rosemary, thyme, garlic cloves, Parmesan cheese, lemon zest, dill, paprika

Instructions

 

  1. Part 1: Corn Pudding

     

    1 .Preheat oven to 350°F (175°C). Grease a baking dish.  

  2. In a large bowl, whisk together eggs, milk (or cream), and melted butter.
  3. Stir in corn, sugar (if using), salt, and pepper.
  4. Pour the mixture into the prepared baking dish.
  5. Bake for 45-50 minutes, or until the pudding is set and lightly golden on top. A toothpick inserted into the center should come out clean.

 

Part 2: Oven-Roasted Potatoes

  • Preheat oven to 425°F (220°C).
  • Wash and cut potatoes into uniform pieces. Peel if desired.
  • In a large bowl, toss potatoes with olive oil, salt, pepper, and any desired herbs or seasonings.
  • Spread the potatoes in a single layer on a baking sheet.

 

  • Bake for 30-40 minutes, flipping halfway through, until golden brown and crispy.

Notes

  • Using a water bath (placing the baking dish in a larger pan filled with hot water) helps prevent the pudding from drying out.  
  • Fresh corn provides the best flavor, but frozen or canned corn can be substituted.  
  • Adjust sweetness and seasonings to taste.
  • Parboiling the potatoes for 5-10 minutes before roasting can help create an even crispier exterior.

  • Avoid overcrowding the baking sheet for optimal crispiness.
