Ingredients
- Whole Garlic Heads: 2 medium
- Russet or Yukon Gold Potatoes: 2 lbs, peeled and chopped
- Unsalted Butter: 1/2 cup, softened
- Whole Milk or Heavy Cream: 1/2 cup (plus more as needed)
- Salt: To taste
- Black Pepper: To taste
- Fresh Chives or Parsley (Optional): For garnish
- Olive Oil: For roasting garlic
Instructions
- Roast the Garlic:
- Preheat oven to 400°F (200°C).
- Remove outer papery layers of garlic, leaving cloves intact.
- Slice off the tops of garlic heads.
- Place garlic on foil, drizzle with olive oil and wrap loosely.
- Roast for 40-45 minutes, or until cloves are soft and caramelized.
- Cool, then squeeze the roasted garlic from the skins.
- Prepare the Potatoes:
- Boil a large pot of salted water.
- Add potatoes and cook for 15-20 minutes, or until fork-tender.
- Drain potatoes and return to the pot over low heat to remove excess moisture.
- Mash and Mix:
- Add roasted garlic and butter to the hot potatoes.
- Mash until smooth using a masher or ricer.
- Gradually stir in milk or cream until the desired consistency is reached.
- Season with salt and pepper.
- Serve: Transfer to a serving dish and garnish with chives or parsley (optional).

- Substitute some butter with cream cheese or sour cream for a deeper flavor.
- Adjust the amount of roasted garlic to taste.
